Mindyritas and burritos

How about margaritas and burritos? I want to thank Mandy Norrell for asking for the recipe of what she calls “Mindyritas.” I love it!

It’s easy to make great Mindyritas like Larue and Mindy. You can whip up the mix to have on hand in case of an “Emergency Margarita Night.”
You can store it in your freezer to be used whenever you have a craving for a delicious lime treat. Combine the mix ingredients and put in a container.

Mix:

1 (12 fluid ounce) can frozen limeade concentrate
1 (12 fluid ounce) can frozen lemonade concentrate

Margaritas:
1/3 cup frozen mix
1 cup water
1 cup orange juice
1/3 cup tequila
1/8 cup triple sec
3 fresh limes

Add to pitcher:

1 part frozen mix
3 parts water
3 parts orange juice
1 part tequila
1/2 part triple sec
3 parts fresh lime juice

Rim the glasses with salt, fill with ice, then pour in your delcious margarita. Enjoy while reading Larue’s adventures in Me and My Ghoulfriends and Ghouls Night Out!

Don’t skip the freshly squeezed limes. They really add to the flavor.

What’s a margarita without a yummy burrito? Larue’s chicken burritos.

Ingredients:

1 tablespoon vegetable oil
1 chopped onion
1 chopped garlic clove
3 cups cooked shredded chicken
1/2 tsp. adobo
1/2 tsp. salt
6 flour tortillas
3 cups shredded iceberg lettuce
3/4 cup tomato salsa
1 1/2 cups shredded Cheddar/Monterey Jack cheese
Sour cream

Preparation:

Warm vegetable oil in a large skillet over medium-high heat. Add chopped and garlic and cook until softened. Stir in chicken and 1/2 tsp. salt, 1/2 adobo, and cook for 2 minutes.

In seperate skillet, warm flour tortillas. Place shredded lettuce, chicken, salsa and cheese onto each tortilla. Add a nice dollop of sour cream. Yum.

      LOL. Awesome! If you buy yellow pants, please take a picture! I’m not sure where one would even find yellow pants. I guess Mindy would know.
